Ingredients:
- 1 stick of vegan butter
- 1 cup of brown vegan sugar
- ¼ cup of applesauce
- A pinch of salt
- 2 tbsp caster sugar
- 2 tsp vanilla bean extract
- 2 tbsp of non-dairy milk
- 2 cups of all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- 1 tbsp cornstarch
- 1 cup of dairy-free dark chocolate chips
Instructions:
- Preheat the oven to 350* and line a baking sheet with parchment paper.
- Place the vegan butter, brown vegan sugar, and caster sugar in a bowl and whisk until fluffy.
- Whisk in the vanilla bean extract and applesauce.
- Sift the flour, baking powder, baking soda, salt, and cornstarch together, then mix into the bowl.
- Add the chocolate chips and stir through. The dough may be stiff.
- Pour the dairy-free milk in and mix.
- Divide the dough into eight portions and roll each into a ball.
- Place them spaced apart on the baking tray and flatten slightly.
- Bake for 10-12 minutes until pale golden.
- Let them cool for 10 minutes.
